Make the Herb Rub:
Mix oil, butter, garlic, herbs, salt, and pepper.
Rub all over the turkey.
Wrap and Rest:
Wrap tightly in foil. Let it sit for 30-60 mins.
Prepare Campfire:
Set up a grill grate over medium-high heat.
Cook the Turkey:
Place wrapped turkey on the grate.
Cook for 2.5-3 hrs, turning occasionally.
Check for 165°F internal temp.
Unwrap in the last 20-30 mins. Brush with butter, roast directly over flames.
